Worcestershire sauce was first produced in the city of Worcester in England by two pharmacists named John Wheeley Lea and William Perrins in the early 19th century. These two pharmacists initially intended to create a tonic for digestive ailments, but the resulting mixture had such a strong and unpleasant taste that they stored it in the basement. After a few years and natural fermentation, they discovered that its flavor had surprisingly become pleasant and enjoyable. Since then, mass production of this sauce began and it quickly gained popularity worldwide.

How to Make Homemade Worcestershire Sauce

To make this delicious sauce, you will need the following ingredients:

  • Olive oil: 2 tablespoons
  • Chopped onion: 6 cups
  • Jalapeño peppers: 4
  • Chopped garlic: 2 tablespoons
  • Coarse ground black pepper: 2 teaspoons
  • Anchovy fish: 60 grams
  • Cloves: ½ teaspoon
  • Sea salt: 2 tablespoons
  • Lemon: 2
  • Cane syrup: 2 cups
  • White vinegar: 8 cups
  • Honey: 4 cups
  • Horseradish (grated): 3 cups
  • Fresh ginger: 1 teaspoon
  • Water: 4 cups

First, in a large heavy pot, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent. Then add the chopped garlic, jalapeño peppers, and fresh ginger to the pot and sauté for a few more minutes until their aroma rises.

After that, add the anchovy fish along with the black pepper, cloves, and sea salt to the mixture and stir well. Add the cane syrup, honey, and water to the pot and bring the mixture to a boil. Then reduce the heat and let it simmer for 30 minutes with the lid slightly open to allow the ingredients to combine well.

Uses of Worcestershire Sauce in Cooking

Worcestershire sauce has a wide variety of applications in cooking. This sauce can be used to flavor meat and poultry, make Caesar salad dressing, add to soups and stews, and also prepare dips and other sauces. Additionally, for vegetarians who avoid the taste of anchovy, anchovy-free versions of this sauce are also available.

Homemade sauce should be stored in the refrigerator and should not be left at room temperature for long periods. By following these tips, you can enjoy the delicious flavor of your homemade Worcestershire sauce.
