Dill, this fragrant and aromatic herb, is one of the unforgettable scents in Iranian cooking. To prepare high-quality dried dill, the first step is to choose fresh herbs. Green and healthy leaves are a sign of high-quality dill. If the dill is already wilted or shows signs of decay, it will lose its aroma and color after drying.
Methods for Drying Dill
After purchasing, gently wash the dill with clean water to remove any dirt. One important tip is that after washing, you should not let water remain on the leaves. Place the dill in a colander and use a clean towel to absorb any excess moisture. Remaining water on the leaves can prolong the drying time and cause mold.

One of the best homemade methods for drying dill is to dry it in the shade. Spread the drained dill in thin layers on a tray or clean cloth so that air can circulate well between them. Place the tray in a location away from direct sunlight to preserve the color and aroma of the dill. It is also better to occasionally move the herbs around to ensure they dry evenly.
Faster Methods for Drying Dill
If you don't have enough time for the traditional method, you can use two other methods:
1. Using a Fan: This method helps to evaporate the surface moisture of the herbs more quickly with airflow. Spread the dill in a thin layer on a tray or clean cloth and place the fan at a suitable distance to ensure good airflow. In this method, the cleanliness of the environment is important to prevent dust from transferring to the dill.
2. Using an Oven: With this method, you can dry the dill in less time, but you need to be careful that high heat may reduce the color and aroma of the herb. Therefore, set the oven to the lowest possible temperature and place the dill in a thin layer on a tray. Temperatures around 50 degrees Celsius are suitable for drying dill. During the process, regularly check the condition of the dill to prevent it from burning.
Determining the end time is also very important. If the dill is placed in a sealed container before it is completely dried, the remaining moisture can cause it to mold. The dried leaves should crumble easily, and the stems should break easily when bent.
After completely drying, place the dill in a clean and dry container and store it in a cool place away from direct sunlight. To maintain quality, it is better to keep the dill as whole leaves and only chop it when cooking. If you notice mold or an unusual smell, avoid consuming it.
