Tarhana soup, one of the traditional and popular soups in Turkish cuisine, with its distinctive and unique flavor, is a reminder of the rich culture of this country. The main base of this soup is tarhana flour, which is made from a combination of dried and fermented ingredients. This special feature gives the soup a slightly tangy taste, making it a suitable option for an appetizer at parties.

To prepare this delicious soup, you will first need the following ingredients: tarhana flour (3 tablespoons), oil (2 tablespoons), dried mint (1 tablespoon), tomato paste (1 tablespoon), water (6 cups), salt and pepper to taste.

First, place a suitable pot on the heat and pour the oil into it. Then add the dried mint and sauté for a short time to release its aroma. At this stage, keep the heat medium to prevent the mint from burning. After that, add the tomato paste to the pot and sauté a little more to enhance the color and aroma of the soup.
Next, add the tarhana flour to the ingredients in the pot and sauté a bit until it is fully combined with the oil and tomato paste. This helps to ensure that the flour blends well with the soup's base ingredients and dissolves better in water. Do not increase the heat at this stage to prevent the ingredients from sticking to the bottom.
Cooking the Soup and Creating the Right Flavor
After sautéing the flour, add six cups of water to the pot. It is better to pour the water slowly into the pot while continuously stirring the ingredients. This prevents the formation of flour lumps in the soup. When the soup comes to a boil, reduce the heat and let it simmer for a short time to thicken its texture.
If desired, you can adjust the soup's thickness by adding a little warm water or cooking it longer. Tarhana soup should have the aroma of mint and tomato paste alongside the special taste of tarhana. Finally, pour the soup into a suitable dish and prepare it for serving.
To enhance the soup's appearance, you can place some fried bread on top. The combination of crispy bread with the soft and warm texture of the soup provides a different experience. Also, if you prefer a spicy taste, you can adjust the amount of pepper to your liking.
Tarhana soup shows its best quality when served hot. With its pleasant aroma and taste, this soup can become one of the most popular options at parties and gatherings.
