Pumpkin stew with chicken and pomegranate paste is one of the most delicious and delightful autumn dishes. This stew, with its blend of the mild sweetness of pumpkin, the tartness of pomegranate paste, and the aroma of saffron and cinnamon, can provide you with a different experience of home-cooked meals.

Ingredients for Preparing the Stew

To prepare this delicious stew, you will need the following ingredients:

  • Chicken (breast or thigh): 500 grams
  • Pumpkin: 400 grams
  • Large onion: 1 piece
  • Pomegranate paste: 4 tablespoons
  • Steeped saffron: 2 tablespoons
  • Cinnamon stick: 1 small piece
  • Oil: as needed
  • Salt, black pepper, turmeric: as needed
  • Ginger powder (optional): as needed

How to Prepare Pumpkin Stew

To start, season the chicken pieces with salt and black pepper. Then, in a pot, add some oil or butter and sauté the chicken on both sides until golden. This will create a deeper flavor in the stew.

Next, add the chopped onion to the pot and sauté until it becomes soft and translucent. At this stage, add the turmeric and sauté for about a minute to release its aroma. If you like, you can also add some ginger powder to the onion.

Cut the pumpkin into cube-sized pieces and add it to the onion. Sauté for about 5 to 7 minutes over low heat to enhance the flavor. Then, return the fried chicken to the pot, add the cinnamon stick, and pour about 2 to 3 cups of boiling water over the ingredients.

Allow the stew to cook for 40 to 50 minutes over low heat. At this stage, do not stir the pumpkin to maintain its shape and texture.

Finally, add the pomegranate paste and steeped saffron to the stew and let it cook for another 15 minutes over low heat for the flavors to blend well.

This stew is traditionally served with rice, but you can also try it with traditional Iranian bread. Adding freshly chopped herbs at the moment of serving will give this dish a new aroma and flavor, adding a sense of lightness to it.
