- Pasta: 450 grams
- Pumpkin puree: 2 cups
- Milk: 1 cup
- Parmesan cheese: 1 cup
- Garlic: 4 cloves
- Chopped parsley: 2 tablespoons
- Olive oil: 2 tablespoons
- Salt: 1.2 teaspoons
- Black pepper: 1.2 teaspoons

How to Prepare Pumpkin Pasta
In a large pot, pour some water and place it over high heat until it boils. Once the water is boiling, add some salt and pour the pasta into the pot. Cook the pasta according to the time indicated on the package, about eight to ten minutes, until it reaches an al dente state. Before draining, set aside about one to one and a half cups of the pasta water, then drain the pasta.
Place a large skillet over medium heat and warm the olive oil in it. Then add the chopped parsley and minced garlic to the skillet and sauté for about a minute until the garlic's aroma is released. Be careful not to let the garlic change color to avoid a bitter taste in the sauce.
Next, add the pumpkin puree to the garlic and parsley mixture and stir gently. Add salt, black pepper, and nutmeg, and let the ingredients combine over low heat for 2 to 3 minutes so that the aroma and flavor of the spices are well distributed in the sauce.
Gradually add the milk to the sauce while stirring to achieve a smooth and creamy mixture. Add the cooked pasta to the skillet containing the sauce and gently stir to ensure the sauce evenly coats the entire surface of the pasta. Finally, add the grated Parmesan cheese to the pasta and mix until the cheese is completely melted.
Serve this pasta immediately to keep its taste and texture fresh and delicious. Remember that choosing the right type of pasta and adjusting the sauce's flavor can provide a delightful experience of this dish.
