How to Make Persimmon Mousse
First, wash the persimmons and peel them. Then cut them into small pieces and place them in a blender until completely pureed. To achieve a smoother texture, you can strain the puree through a fine sieve. Then add the lemon juice to the puree and mix.
Pour the powdered gelatin into 4 tablespoons of cold water and let it sit for 5 to 10 minutes to swell. Then place it in a warm water bath to dissolve. Be careful not to let the gelatin boil to preserve its properties.
In a small saucepan, combine the milk and sugar over medium heat and stir until the sugar dissolves. Then add the vanilla. Add the melted gelatin to the milk mixture and stir well. Let the mixture cool slightly, then add it to the persimmon puree and mix together.
Whip the cream until it becomes fluffy and elastic. Then gently fold it into the persimmon mixture in a circular motion to maintain the mousse's texture. Pour the mixture into desired molds and refrigerate for at least 4 to 6 hours until the mousse sets completely.
Garnish the persimmon mousse with whipped cream, thin slices of persimmon, and crushed pistachios, and serve immediately. By following the key tips in preparing this dessert, you can easily create a perfect persimmon mousse.
