- Lamb or beef: 300 grams
- Lentils: 1 cup
- Local sour yogurt: 6 cups
- Sunflower oil: 2 tablespoons
- Chopped onion: 1 cup
- Tomato paste: 3 tablespoons
- Spices and saffron as needed
How to Prepare Dough Paw
To prevent bloating and improve the texture of the dish, wash the lentils thoroughly and place them in a large bowl filled with water to soak for several hours or overnight until they soften.
Chop the onions finely and sauté them in a pot with a little oil until they become light and translucent. Then add the meat, which should be cut larger than stew meat, to the onions and sauté it with turmeric and black pepper until it changes color and absorbs the aroma of the spices.
After that, drain the soaked lentils and add them to the pot. Sauté them with the meat and onions for one minute. In one corner of the pot, add the tomato paste and fry it well until its raw color and smell disappear. Then mix the paste with the other ingredients.
The best time to add the yogurt is when the meat is semi-cooked. Add the sour yogurt to the pot, cover it, and let it simmer on low heat for 1 to 2 hours until the meat and lentils are completely tender. Note that the sourer the yogurt, the longer the cooking time for the meat will be.
When the stew thickens, add the brewed saffron and taste the stew. Adjust the salt and spices as needed. This stew should be served with steamed rice to create a balance between the texture of the stew and the rice.
For visual appeal and better flavor, you can add some diced fried potatoes to the stew towards the end of cooking. Additionally, serving a vegetable salad or fresh herbs alongside Dough Paw is recommended to complete the meal.
