How to Prepare Arabic Arais Fattah
First, finely chop or grate the onion and tomato. It is better to remove the excess water from the tomato with a cloth or strainer so that the meat mixture does not become wet. Also, finely chop the parsley. Crush or grate the garlic. Then, in a large bowl, combine the minced meat with the onion, tomato, parsley, garlic, tomato paste, red pepper, black pepper, paprika, cumin, salt, and olive oil. Mix all the ingredients thoroughly with your hands or a wooden spoon until you have a uniform meat mixture. To allow the spices to better infuse into the meat, you can let the mixture rest in the refrigerator for 30 minutes to 1 hour.
Cut the pita or lavash into desired sizes. Typically, pita bread is cut in half to open up the pocket of the bread. If you are using lavash, you can cut it into squares or rectangles. Then, place some of the meat mixture inside the bread and spread it out. Make sure the meat layer is not too thick so that the bread cooks well. You can seal the edges of the bread with a little water or egg yolk to prevent the filling from spilling out, but this is optional.
Methods for Cooking Arabic Arais Fattah
There are several methods for cooking Arabic Arais Fattah, each creating its own unique flavor and texture:
- Cooking in a Pan: Place a non-stick pan over medium heat and add a little olive oil. Arrange the Arais in the pan and fry each side for about 3 to 4 minutes until the bread is crispy and the meat is fully cooked.
- Cooking in the Oven: Preheat the oven to 200 degrees Celsius. Place the Arais on a baking sheet lined with parchment paper and bake for 10 to 15 minutes until the bread is golden and the meat is cooked. You can flip the Arais halfway through cooking.
- Cooking on a Grill or Barbecue: For a smoky flavor, place the Arais on the grill or barbecue and cook each side for 3 to 4 minutes.
After cooking, place the Arabic Arais Fattah on a paper towel to absorb any excess oil and serve warm.
