How to Prepare Two Onion Potato
To start, fill a pot with water and place it on heat until it boils. Cut the potatoes into one-and-a-half centimeter cubes and add them to the boiling water. Let the potatoes boil for 5 to 7 minutes, then drain and set aside.
In a large pan, heat the olive oil over medium heat and add the finely chopped onions. Sauté the onions until they are soft and golden. Then add the tomato paste, turmeric, black pepper, and salt, and sauté the mixture for 1 to 2 minutes to release the aroma of the spices.
Add the drained potatoes to the pan and gently stir to coat all the potato cubes with the onions and paste. Allow the mixture to sauté for another 5 to 8 minutes over low heat to let the flavors combine well.
Serve Two Onion Potato Shirazi warm with fresh bread and your choice of side dishes. This simple and delicious dish evokes sweet memories and the rich culinary culture of Iran.
Note that in the Shirazi dialect, "Alu" means potato, and this dish has no relation to the fruit "Alu." The softer texture of this dish can be achieved by mashing the potatoes and mixing them with sautéed onions.
