- 300 grams of boneless lamb or beef
- 250 grams of ground walnut
- 200 grams of ground sesame
- 50 grams of pomegranate seeds
- 1 cup of sour pomegranate juice
- 1 tablespoon of fried onion
- 1 tablespoon of turmeric
- 2 eggs
- 2 tablespoons of sugar (optional)
- Oil, salt, and pepper as needed
How to Prepare Shisheh Naz
First, chop the meat finely (minced). In a pot, sauté the meat with a little oil, then add the fried onion and turmeric. Allow the meat to cook on low heat until it is completely tender.
Grind the walnut, sesame, and pomegranate seeds together. Add this mixture to the partially cooked meat and stir to combine the flavors. Towards the end of cooking, add salt and pepper. Then add the sour pomegranate juice. If you prefer your stew to be a bit sweet, add the sugar at this stage. Let the stew simmer with this new combination for a while until it thickens well.
You can choose one of three methods to add the eggs according to your preference:
- First Method: Fry the eggs sunny-side up or as an omelet and place them on top of the stew after serving it in a dish.
- Second Method: Beat the eggs in a separate bowl and add them to the stew towards the end of cooking.
- Third Method: (Traditional) Crack the egg directly into the thickened stew and stir.
Serve this delicious dish alongside warm rice. If you do not have access to pomegranate juice, you can use 1 tablespoon of pomegranate paste. The amount of sour pomegranate juice and sugar is entirely to taste; you can add them individually or together and adjust according to your preference. This dish is very flexible, and you can prepare it without using meat, making it a completely vegetarian, nutritious, and delicious meal.
Instead of meat chunks, you can also use ground meat in the form of small meatballs in this recipe.
