Thawing meat, poultry, or fish on the countertop is a common habit in kitchens that many people use to speed up food preparation. However, this seemingly simple method can pose serious health risks. Food safety experts strongly warn that thawing these foods at room temperature can increase the likelihood of foodborne illnesses.

Risks of Thawing on the Countertop

When meat, poultry, or fish is placed on the countertop, its outer layer quickly warms up while the center remains frozen. This situation means entering a dangerous temperature zone; a place where bacteria can multiply rapidly. Temperatures above 4 degrees Celsius for food surfaces can easily create conditions for bacterial growth and jeopardize people's health.

Safe Thawing Methods

The best method for thawing meat, poultry, or fish is to transfer it to the refrigerator 24 hours before consumption. This method may be time-consuming, but it ensures greater safety. For this, it is better to place the food in a sealed container on the bottom shelf of the refrigerator to prevent its water from coming into contact with other foods.

If you are using a microwave for thawing, you must cook it immediately after thawing. This is because the microwave may heat parts of the food and create conditions for bacterial growth. Additionally, if you are looking for the fastest method, you can fully submerge the meat in cold water and change the water every 30 minutes. This method is faster than the refrigerator, but hygiene must be maintained, and the food should be placed in waterproof packaging.

Although thawing on the countertop may seem quick, it is by no means safe. It is better to use safer methods such as the refrigerator, microwave, or cold water while adhering to hygiene principles. With these methods, you can reduce the risk of foodborne illnesses and prepare healthier food.
