Pan-fried kebab with tomato sauce is considered one of the most popular dishes in Iranian cuisine. Due to its delicious taste and easy preparation method, it is always favored by families and friendly gatherings. This dish can be easily prepared at home and enjoyed.
How to Prepare Pan-fried Kebab
To prepare pan-fried kebab, first grate the onion and squeeze out its juice. Then add the ground meat along with salt and black pepper to the mixture and knead well until a uniform and sticky combination is achieved. This step in making the kebab is very important, and it is better to knead this mixture for 5 minutes. If you have time, you can place the mixture in the refrigerator for an hour to allow the flavors to blend better.
Cooking Kebab and Preparing the Sauce
Next, choose a suitable pan and place it over medium heat. Add enough oil to the pan and flatten some of the meat mixture with your palm before placing it in the oil. This can also be done in the form of patties. When the moisture from the meat has evaporated and the bottom of the kebab is well fried, flip the kebab to fry the other side as well. An important point is that if the diameter of the grill pan is smaller, it requires less frying time, and the meat will not become tough.
Then, cut the tomatoes in half and after frying the kebabs, first remove the kebabs from the pan and then sauté the tomatoes until they become soft and delicious. At this stage, add tomato paste to the tomatoes and sauté until the raw smell is gone. Then add some salt and pepper along with meat juice or meat stock to the mixture and stir.
When the sauce comes to a slight boil and reaches the desired thickness, return the prepared kebabs to the pan and let them simmer in the tomato sauce for a while. Finally, your delicious pan-fried kebab is ready, and you can serve it with bread or rice. Enjoy!
