- Chicken (preferably thighs or drumsticks) 4 pieces (about 1 to 1.2 kilograms)
- Large onions 3 pieces
- Garlic 5 to 6 cloves
- Strongly brewed saffron 3 tablespoons
- Butter 30 grams
- Liquid oil 1 to 2 tablespoons
- Green cardamom 3 pieces
- Cinnamon stick 1 small piece
- Bay leaf 1 piece
- Coriander seeds 1 teaspoon
- Black pepper half a teaspoon
- Salt to taste
- Lemon juice 1 to 2 tablespoons
- White vinegar 2 tablespoons

Method for Preparing Mashhadi Chicken
To begin, remove any excess fat from the chicken and, if desired, remove the skin. If you want to reduce the strong odor of the chicken, soak it in a mixture of cold water, salt, and vinegar for about 1 to 2 hours in the refrigerator. Then take the chicken out and dry it with a kitchen towel.
Slice the onions into thin strips and spread half of them in a pot or deep pan. Arrange the chicken pieces on top of the onions, and then place the cardamom and garlic cloves next to the chicken. Sprinkle the spices and brewed saffron over the chicken, and finally, add the butter and oil.
Cover the pan and place it over medium heat. After about 10 to 15 minutes, reduce the heat and let the chicken cook slowly. This stage will take about 1.5 to 2 hours. During this time, the onions will release their juices and create a delicious sauce.
After about 1 hour and 15 minutes, open the lid of the pan and check the doneness of the chicken. If the chicken is not fully cooked yet, you can add a little boiling water. Finally, after the chicken is fully cooked, add fresh lemon juice and the remaining saffron, and let the dish simmer for another 15 to 20 minutes over low heat.
Mashhadi chicken is ready. Arrange it on a serving dish and serve with soft, golden onions and thick sauce along with rice or fried potatoes.
