Pink pickles are one of the attractive and delicious condiments that can make your table more colorful. This type of pickle has a beautiful and natural color due to the presence of beetroot in its ingredients and can be easily prepared at home. In the following, you will learn how to make this special condiment.

Ingredients for Making Pink Pickles

To make pink pickles, you will need the following ingredients:

  • Small cucumbers: 3 kilograms
  • Medium beetroot: 1 piece
  • Fresh dill: 1 bunch
  • Garlic: 6 cloves
  • Vinegar: 500 milliliters
  • Salt: 3 tablespoons
  • Cold water: half a liter

Steps to Make Pink Pickles

To make these beautiful pickles, first wash the beetroot well and dry it. Then, using a sharp knife, peel the beetroot and keep the skin. Cut the beetroot into slices. Now, place the washed and completely dried cucumbers in a jar on top of the beetroot skin. While arranging the cucumbers, place the beetroot slices among the cucumbers.

Add the peeled garlic cloves into the jar and layer the washed and completely dried dill on top of the cucumbers. Mix the salt with half a liter of cold water and pour it into the jar, then add half a liter of vinegar. If your jar is not full yet, you can add some more cold water to completely cover the cucumbers.

Tightly close the jar lid and place it in the refrigerator or a cool place for 15 days to let the pickles mature. For crunchier pickles, it is better to use sea salt instead of regular salt. Also, adding some chickpeas can help make the pickles crunchier.

Important Tips for Making Pickles

The amount of salt for making pickles is 1 cup of salt for every 15 cups of water. If you use less salt than usual, your pickles will become slimy and soft. Be sure to cut the garlic cloves in half to better distribute the garlic aroma in the water. Additionally, if you place the pickle jar in sunlight, the color of your pickles will become brighter.

If you are using savory herbs for making pickles, be aware that too much savory will make the pickles bitter. The use of pickling pepper and its amount is entirely optional and depends on your taste.

To prevent the pickles from molding after preparation, make sure the jar lid is tight. If the jar lid is loose, before closing it, place a plastic bag over the top of the jar and then close the lid on it to prevent air from entering the jar. After opening the jar and using the pickles, be sure to store the jar in the refrigerator.

If you boil the cucumbers with boiling water for a few minutes, your pickles will be ready to consume one day after preparation. Just keep in mind that pickles made this way should be consumed sooner and cannot be stored for a long time.

Finally, by following the mentioned tips, you can prepare delicious and beautiful pickles at home and enjoy their taste alongside various dishes.
