Selecting healthy and ripe persimmons is the key to your success in making leather. After washing the fruits, remove the green parts and stems, and cut them into small pieces.
Process of Making Leather
To start, place the pieces of persimmon in a blender or food processor and blend them thoroughly until you achieve a smooth and uniform puree. If using a blender, it is better to use the pulse setting to maintain the fruit's texture.
If the puree still has bits of skin or large particles, strain it through a fine sieve to create a soft and velvety texture. At this stage, you can add salt or lemon juice to adjust the flavor, and increase the amount if necessary after tasting.
Then, line a baking tray with parchment paper and spread the persimmon puree evenly on it. The ideal thickness of the puree should be between 3 to 5 millimeters. Set the oven to a low temperature (70 to 80 degrees Celsius) and place the tray inside to allow moisture to slowly escape.
This stage may take 6 to 10 hours. Check the leather every few hours to ensure that its surface is not sticky and remains flexible.
Once done, remove the tray from the oven and let the leather cool at room temperature. Then cut it into desired strips and roll it up.
For storage, place the leather in airtight containers in a dry and cool place. By adding a little red pepper powder or saffron during the pureeing stage, you can make the flavor and color of the leather more special. Enjoy!
