How to Make Pistachio Cookies
To start, preheat the oven to 170 degrees Celsius and line a baking tray with parchment paper. If you don’t have parchment paper, lightly grease the tray and sprinkle some flour. Measure all the ingredients in advance to have more speed and accuracy while preparing.
In a large bowl, mix the softened butter with granulated sugar and brown sugar. Beat this mixture with an electric or manual mixer for 2 to 3 minutes until it becomes light and creamy. Then, gently add the egg to the mixture and mix well. If you are using vanilla, add it at this stage as well.
In a separate bowl, mix and sift the flour, cornstarch, baking powder, and salt together. Then, gradually add the dry ingredients to the butter and sugar mixture and stir until a smooth dough forms. Finally, add the ground pistachios, chopped pistachios, and chopped milk chocolate to the dough and gently combine.
Place the cookie dough in an airtight container and let it rest in the refrigerator for at least 30 minutes. Then, take a piece of dough the size of a medium walnut and place the balls about 5 centimeters apart on the baking tray. Place the tray in the preheated oven and bake for about 12 to 15 minutes.
After baking, let the cookies sit on the tray for 5 to 10 minutes, then transfer them to a wire rack to cool completely. These delicious cookies will soon be crispy and ready to serve.
To be more professional, make sure to cool the cookies on a rack after baking.
