- Chicken (cut into pieces) 400 grams
- Fresh dill 300 grams
- Parsley about 40 sprigs
- Onion 1 piece
- Fresh plums 300 grams
- Sugar 1 tablespoon
- Turmeric 1 teaspoon
- Salt and pepper to taste
- Oil as needed
How to Prepare Shivid Khoresht Gilan
First, pour a little oil into a pot and add the chicken pieces. At this stage, cover the pot so that the chicken cooks gently and releases its juices. Then add the chopped onion to the chicken. Stir a little and let the onions soften. At this time, add the turmeric and allow the color of the chicken and onion to change.
To make peeling the plums easier, make a deep “+” mark with the tip of a knife in the areas without pits. This will allow the skin of the plums to come off easily while keeping their shape intact.
Finely chop the herbs (dill and parsley) and add them to the pot. Be careful not to fry the herbs too much to preserve their aroma and properties. Then add the sugar, salt, pepper, and prepared plums to the pot and pour enough water to cover the chicken and plums. Initially, increase the heat to bring the water to a boil, then reduce the heat to let the stew simmer gently.
The use of sugar in this stew does not mean it will become sweet; rather, it aims to balance the excessive sourness of the plums so that the stew reaches a balanced and pleasant flavor. If you are using green and sour plums, adding sugar is essential, but black and ripe plums require less sugar.
This magical stew is very versatile, and you can enjoy it with steamed or plain rice or with fresh bread. The choice is yours!
