- All-purpose flour: 1 cup
- Milk: 1 cup
- Eggs: 2
- Vegetable oil: 1 tablespoon
- Salt: 1.2 teaspoons
- Cooked chicken breast: 1
- Cooked corn: 1.2 cups
- Onion: 1 small
- Black pepper: to taste
- Thyme: 1.2 teaspoons
- Oil: a little for sautéing
Preparation Method
First, crack the eggs into a suitable bowl and whisk them well with a hand mixer or fork until smooth. Then add the milk, oil, and salt, and mix.
The key point is to sift the flour beforehand and gradually add it to the mixture to achieve a smooth batter without lumps. The consistency of the batter should be similar to thick buttermilk; if it is too thick, add a little milk.
In a non-stick pan, set the heat to medium and lightly grease the bottom with a little oil. Pour a ladle of the crepe batter into the center of the pan and swirl the pan to spread the batter into a thin layer. Allow one side of the crepe to cook, then flip it to cook the other side as well.
To prepare the filling, finely chop the onion and sauté it in a pan with a little oil until soft and translucent. Then shred the cooked chicken breast and add it to the onion. Next, add chopped bell pepper and cooked corn to the mixture and sauté for a few minutes. Finally, add black pepper and thyme and mix. The filling should not be watery so that the crepes do not become soggy.
Place one crepe on a work surface and add some of the chicken and corn mixture in the center. Sprinkle a little pizza cheese over the filling and roll or fold the crepe into a roll or pocket shape. If you used pizza cheese, you can place the prepared crepes in a non-stick pan over low heat for a few minutes to melt the cheese.
To prevent the crepes from drying out, do not increase the heat and use medium to low heat. For variety and to make this snack more nutritious, you can also add diced cooked carrots or peas to the filling.
If you are preparing this dish for school, allow it to cool completely and then cut it into small bite-sized rolls to make it easier for children to eat. Enjoy!
