Ingredients for Making Arabic Rolled Ice Cream
To make this delicious dessert, you will need the following ingredients:
- Whole milk: 1 liter
- Sugar: 1 cup
- Salep powder: 2 tablespoons (level)
- Mastic: 1 teaspoon (level)
- Whipping cream: 300 grams
- Chopped pistachios: as needed
How to Make Arabic Rolled Ice Cream
To start, due to the gummy property of mastic, it is better to first put 2 tablespoons of the sugar in a grinder and then add the mastic. This will prevent the mastic from sticking to the grinder blade. After the mastic is powdered, mix the remaining sugar with the salep powder and the powdered mastic.
Next, pour the cold whole milk into a thick-bottomed pot. Gradually add the dry ingredient mixture to the milk while stirring vigorously until smooth. Place the pot over low heat and stir continuously until the mixture heats up and reaches the desired thickness.
Once the milk is completely hot, add the whipping cream and stir until dissolved. Remove the mixture from the heat and place it in a large bowl of ice water to cool quickly. Then cover the bowl with plastic wrap and place it in the freezer for 10 hours.
After the mixture has frozen, cut it into small pieces and place it in a mixing bowl. Beat at medium speed until the ice cream reaches a soft and chewy texture. If the ice cream is too hard, let it sit at room temperature for a few minutes and then beat again.
To serve, cover a tray with plastic wrap, pour the mixture onto it, and smooth the surface. Cover the surface of the ice cream with chopped pistachios and place it in the freezer until firm. Then, using the plastic wrap, roll the ice cream and cut it into slices to serve.
